Peanut Butter Everything Cookies

"I want cookies."

My friends are so demanding =)




Originally, we were supposed to make the Sneaky Snickers Cookies, but after realizing we barely had a pile of snickers, it was time for a new plan!


We added some Twix and some M&Ms to make it a candy-filled cookie... super healthy, I know!

Chocolate Chip Streusel Muffins

There's nothing quite like coming home after being away at college, and relishing in the simple joys of life...

Showering in your own bathroom.

Showering without shower shoes.

Walking barefoot.

Eating food without eyeing it suspiciously...

and most of all, spending time with family!



Having easy access to a kitchen at home, I decided to become non-MIA from this blog (it's been my first semester away at college, but luckily M has been so awesome at updating and making up for my lack of posts =) ), and bake something!

Well, I'll be honest. I just wanted something to snack on and eat for breakfast... I swear my parents shop for less yummy (junk) food with M and I away at school! These muffins are the perfect blend of my two favorite things: chocolate and crispy muffin tops!

Pumpkin Pie

It's so close to eating-so-much-you-explode-day... only one exam to go!

I've wanted to make pumpkin pie from scratch for a while now. My apartment currently has two pies in the fridge. Yummy yummy! Update: make that 1 pie ...and its only been 3 days

Sprinkles Cupcakes

Admittedly, I've never actually made it to a Sprinkles, but I have it on good authority that it's pretty awesome. Plus, my friend gave me the cutest matching spatula for my birthday. 


I know. That's a Halloween cupcake liner. I never got around to making festive Halloween cupcakes. Oh well!

Apple Crisp

There are some things that you just always look forward to. 


Pizza. A Free Weekend. Friends. Bad TV. Sleep. 


And things you don't. 


Rain. Exams. Waking Up. Coming home in the dark. 


But the good things (like this) can always turn a bad day into a better one. 




Apple Apple. Crisp Crisp.


In reality, this is more Crisp than apple. 


Can't help it! 


The only good thing that came out of the dining hall in college was apple crisp. And really, it was the crisp. Pretty sure we just tried to get the yummy topping and and as little apples as possible. Oops. 


Every fall since then, my roommate and I have made apple crisp -but if it were up to her, there would be no apples at all.

Green Tea Frosted Cookies

Happy Halloween! (a few days late)


Halloween always entails a mad rush to find or make a costume.  This year was no different.  
After jumping from condiments to 3 blind mice to hula girls, we settled on... smores!  




Marshmallow, chocolate and graham cracker!


As usual, my brain is a little mush and it's becoming difficult to form coherent sentences. So onto the cookies!


After making a batch of Green Tea Cupcakes to take to school, I had a bunch of frosting left over. Not wanting to waste such green tea yumminess, I decided to make some cookies!

Peanut Butter Rice Krispies



Haircuts.

So traumatic. So horrible.

Ugh.

The entire experience makes me shudder.


When they cut my hair so short in second grade that it was above my ears... I cried. 


When I was in Taiwan a while ago, the person chopped all my hair off and declared it beautiful.   It was not


I'll admit, I went home and cried. Then I frantically sent all these crazy emails to my friends detailing the horror story. 


And that was the last time I'll ever get my hair cut there. 


Lessons learned?
1. Don't tell them how much you really want off... Always ask for less. They'll cut off more.
2. No. I do not want bangs. And repeat
3. Haircuts are no fun. Put off until the last possible moment. 


So this has absolutely nothing to do with Peanut Butter Rice Krispies...


...but that's okay. These rice krispies will, however, make you feel tons better if you've had a bad haircut.

Lemon Cookies

Woohoo!! Freeeedom! It's the glorious end of the 3 weeks!


I'm super exhausted and my legs hurt from going to the gym after a week of inactivity.... sad?


Very. 


I'm having writer's block. Blogger's block? Baker's block?


After a long day, my mind is mush. All it wants to do and all it can do is watch some happy TV and zone out.

At the end of the last exam cycle, I had these amazing lemon cookies from Maggianos. I'm a sucker for yummy desserts. Especially ones that don't make me feel like I just ate a stick of butter.




These cookies may look entirely different than the actual ones, but they are perfectly lemony and sweet!

Banana Bread

I had some of the best banana bread over the summer. 


Seriously.
A friend made this amazing banana bread for our "family dinner"/Big Brother viewing. 


SO GOOD. 


How good? My cousin, Em, and I scarfed down a mini-loaf of this banana bread... in under 2 
minutes. 


Wait. I mean we ate all but one slice. 




One slice, which we later divvied into thirds...


We didn't even think to share with the parents. Oops!

Chinese Coconut Buns

Whenever I translate things from Chinese to English...something always gets lost. 




I have a lot of favorite things to eat in Taiwan. 


(In my opinion, there are really two things to do in Taiwan. Eat. Shop. Repeat.)


But one thing, without fail, that I have to eat for breakfast...or snack...is Asian Bread! More specifically, the ones with coconut inside! 



I remember shuffling to the heavenly bakery around the corner from my grandparents' house and pointing out to my mom which ones I wanted to eat.

Sneaky Snickers Cookies

One week ago: miserable.
Today: oh so happy. *I wrote this a couple of days ago. Oh how things have changed already...

Having the impending doom of an exam definitely dampens the spirits...
But having a weekend to do absolutely nothing certainly lifts them as well!

It was a perfect weekend after some intense studying and a new found fear of getting a crazy disease -bugs&drugs, you win! 

Baking coconut buns (coming soon!) and banana bread with friends, watching girly movies, and just having a life outside of my books is probably the best thing I could ever ask for. I'm already waiting for the next weekend...

What else makes me happy?



These snickers cookies. 


In general, cookies make me happy. But these are on another level!

Obviously combining candy and cookies is possibly the best idea anyone could ever have (those Chunky Twix Cookies were pretty amazing).  


But really, these cookies are totally delicious and perfect for anyone who loves peanut butter and snickers!

A Big Pot of Chili

Not a baking recipe? Whaaat?

Yup, that's right.  Em&M are branching out.

Actually, it's just me.  Em's currently enjoying (or not) lovely convenient dorm food. 

I'm a fan of cooking lots of food on the weekend and then living off of it until... well, until it runs out. So a nice big pot of chili was cooking away in the kitchen last weekend a few weekends ago!


Even though this chili is perfect for a rainy day, I'm not quite ready to say goodbye to summer, and my tomato plant isn't either!

Chocolate Chip Streusel Bread

3 day weekends are the best.


That one extra day definitely makes things so much happier. There's so much more time to have fun, relax...and maybe study a little. It helps that Sundays stink a little less and the dreaded Monday is happy instead!


We literally wrote "HAPPY WEEKEND" on our calendar. We're super cool like that.


At least it's only 4 days of class. One day closer...until the next weekend!


Honestly, Saturday can't come any faster. Is it possible to already feel overwhelmed?



I had bookmarked this bread a long time ago. The recipe seemed super easy and I would always have all the ingredients -so no need to run to the store!


With all the chocolate and streusel topping, it's definitely more dessert-like than any normal type of bread.

Summer Pesto

Remember way back in May, when Kay and I made these Perfect Chocolate Chip Cookies?


Well, they were pretty awesome cookies. 


While we didn't win the chance to go to a taping of ATK, they graciously invited participants to a tour of their office. Whaaaaaaaat?




Some tidbits?
They have 2 full time grocery shoppers. TWO. In one year, they spend about $500,000 on groceries alone. Half a million. 


ATK has a great collection of cookbooks, one of the biggest! Why so many? To test new recipes, test cooks must first do research and gather 5 different recipes and try each one. From there, they can make adjustments until they get it perfect.  


Currently, their top selling book is the Slow Cooker Revolution. Because the making of this book requires numerous slow cookers going on at once, ATK had to build a special wall with special electricity wiring (I really don't know what I'm talking about) in order to sustain all the slow cookers. So hardcore!

There are a jabillion cookbooks... puts my library to shame. I have... four?
(And that's three just from this summer...)

It was a great visit and a big thanks to Steph for taking the time to show me around!

After my exam was over, I was ready to get back into the kitchen.  Taking advantage of some fresh basil -a bit from my makeshift garden and mostly from the farmer's market- my roommate and I ventured out of our comfort zone to make some fresh pesto!

Homemade Granola

Exam time already? Didn't we just start school?


Yes. And Yes. 


I'm thinking in circles....

I'm talking in circles...  definitely need a break. 

Time for some homemade granola!


Over the summer, I got into a yogurt phase and decided that instead of buying granola at the store, I would make it! 

Homemade Super easy granola! (And it made the apartment smell nice and cinnamon-y!)

I'm not a fan of buying random ingredients and then only using them once, so I decided to gather what ingredients I had in the kitchen and make my version of granola! No nuts, no wheat germ, and no fancy things.  

It's simple, healthy, and a perfect snack or breakfast that will keep you full!

Cranberry Oatmeal Cookies

My mind feels cluttered.

When did school get so busy?

Cranberry Oatmeal Cookies!


These were my attempt at Wegmans' Cranberry Oatmeal Cookies. I love their cookies so much that my family just sent me some! Along with a few other things -like curry cubes, nail polish, a loofa, and a kitchen knife... They totally think I'm a hobo. 


Back to these cookies though! 




I've been searching for a recipe for these cookies for ages, and finally came across one that looked super delicious! I've had past problems with oatmeal cookies, mainly ones that turn out looking like poo, so I was pretty anxious about how these would compare to my favorite cookies!

Chocolate Raspberry Almond Bars

Is it really already the middle of August??

Time flies! M is back at school and I'll be off in a week as well...if only we could bake all summer and not have to deal with actual brain work!

It's actually kind of weird trying to pack up everything you have and moving hours away from home sweet home.

Since I won't have a kitchen or an oven this next year, I'll have to try my hand at some microwave-baking...interesting, right? I have my eye on some interesting recipes like granola, cookies, and even coffeecake in a mug! Never fear, recipes/success(fail) stories will ensue!



But enough of this nostalgic mood! Recently at a family and friends' barbecue, M and I made this yummy treat to end the night.

Lemon Bundt Cake


Summer vacaaaaaaation! 

This summer has been absolutely relaxing! Besides spending lots of time at home (in the farmlands of New York), we went on a family vacation. It might be one of the last family vacations we'll be able to take for a while, but it was well worth all the battle scars -bruises, mosquito bites, and  scrapes- that Em and I accumulated from the trip.  

It's the first real summer vacation either one of us have had in a long time.  Usually we're busy working or learning/studying or a combination of both. So what have we been doing instead? 


Absolutely nothing! It's rather liberating to just spend time with extended family and friends and realize the importance of "the small things".

Raspberry Orange Popsicles

Holy. Cow. 


It has been absolutely crazy hot outside. So hot that you could bake cookies in your car (very possible).


A wall of humidity and suffocating heat hits you the moment you crack the door open. 


But I really should not complain. 


Summer is Summer. And Summer is oh-so-glorious. 


Popsicles are oh-so-glorious. Especially when it's melt-your-face-off type of weather.





Whether they're rocket ships, original fruit flavored (choose grape, orange, or red -what flavor is that anyways), creamsicles, or push ups, popsicles are the quintessential summer food.

Strawberry Upside Down Cake

Oh the joys of summer! Sleeping "x" amount of hours, spending time with friends and family, and of course all the fresh fruit you can eat! 

 

M spoke earlier of our July 4th tradition of picking cherries, but the plus side (one of the few...) of living in the middle of nowhere is the abundance of farms!


Not excited yet?



Lots of farms means many chances to pick fresh fruit!


Strawberries, Blueberries, Cherries, Apples, Galore!


With our cousin in tow, we went strawberry picking with a few friends. Armed with a tub of water and paper towels, we ate our way through the patch while slowly filling our baskets with bright red strawberries.




We literally camped between the rows and snacked on fresh sun-ripened strawberries. Coming across the giant mutated berries always gave the most satisfaction! 


But if you're like us, you might end up picking more fruit than you can eat before it all spoils. 


But never fear! There is hope! This strawberry season, M and I decided to take some of our leftover strawberries to make a dessert and some smoothies for the family.
