Raspberry Almond Shortbread Thumbprints

It's crazy that another year is coming to an end. The last time I was home it was summer, and now it's a chilly winter! Now all we need is some snow...

This cookie is a classic for the holidays. It's the perfect combo of sweet, crunchy, buttery goodness that we all crave after finals and amidst holiday craziness.

Whoopie pies have made a comeback. And no comeback would be complete without a venture into the pumpkin world. These days, everything's pumpkin. 

These whoopie pies were awesome.  The cake/cookie part is so good, I ate it alone.

J really did the baking for this cake, I just took things out of the cupboards! J and I have been friends since preschool days -when we learned to read Jack & Jill books and played Oregon trail.  It's always the best when we're reunited and even better when we get to bake!

Wellesley Fudge Cake

It's been a while (days, weeks, months...) but that doesn't mean I've stopped baking entirely. 

There's always the need for some procrastination baking, some birthday baking, or just some baking to get into the October feel of things. 


It was birthday time for a friend who has an insatiable sweet tooth and this cake was perfect. And possibly the most chocolatey, rich, fudgy, cake I've ever made...

Cinnamon Blondies

CINNAMON! 

It may still be summer time, but I broke out my giant container of cinnamon to make these blondies!

You may have noticed a serious lack of baking around here -it's a sign that the hospital has taken over my life.  But, I have to admit that the last few weeks have been a welcome change from the previous couple of months -so no complaints from me!



I had the urge to procrastinate and start baking again, so I decided upon something that had easy ingredients, quick preparation, and a tasty result.

Classic Zucchini Bread

I'm back! After taking summer classes and being without homemade food for two months, I decided that it really wasn't summer without some zucchini bread (zucchini from our mom's garden, of course!).


A couple weeks ago M decided to make zucchini bread as well, but without our trusty, classic home recipe, she found the flavors to be lacking in something. This zucchini bread is perfect for breakfast or a snack; or in our case, a midnight snack! Hands down the best time to eat a slice is when it's cooled out of the oven and the top is still a bit crispy.

So for those of you who would like a zucchini bread with stronger flavors, and serious cinnamon-love, here's our family's recipe; easy to follow, and delicious to boot!

Lemon Buttermilk Sheet Cake

What to do when for the first time in two months you have a free weekend?
1. Eat eat eat!
2. Bake bake bake! 
3. WEGMANS (more on this later)
4. Catch up on the errands, cleaning, and cooking that I've avoided for the past 8 weeks, oh well!

It's been a while since the last time I baked anything, but I took a break from the craziness of 3rd year to bake a birthday cake for Kay!
A birthday cake for Kay most definitely includes bunches of lemons, anything else would just not be right!

Carrot Layer Cake

We're back!! 

It's been a long month of isolation, but the giant exam is finally over and life can resume!

But before I retreated into the cave that is the library, it was P's birthday and this pretty cake happened. 


It's also one of the tastiest cakes. I keep saying that all these cakes are amazing, but because this was P's birthday cake, it had to be true -no pressure!


We've already made a couple versions of carrot cake: Em used our mom's recipe and I used one from Flour!

Chocolate Oatmeal Cookies

Otherwise, it'll never happen.

Gahh. I get distracted way too easily by the interweb. And by TV, but more on that later.

These cookies were made out of studying procrastination/frustration a month or two ago, when I was feeling less guilty about baking. 


They're quick and easy to make -which works well if you're short on time, but craving something sweet!

Velvet Devil's Food Cake with Peanut Butter Frosting

Sometimes you should just embrace sugar running in your veins.


Kay introduced this recipe to me way back... when we still had time to bake together. Moop!

It is SO GOOD. 

The batter is amazing. The cake is fantastic. Add frosting, and the whole thing is on another world. 

Normally, I'm not a cake person, but this is  seriously life changing.

Oreo Cheesecake Truffles

Now I have to admit, I've been re-reading the Hunger Games books the past couple days...so excited for the movie!

Or maybe the excitement is due to the lack of Harry Potter books/movies now that they've all been made... Either way, I'm not ashamed to say that I can't wait for the movie to come out on the 23rd!

Actually, I think I just have an obsession with sci-fi...what with Dr. Who and all!

Anyways! A couple weeks ago, in a spring break/early-birthday celebration, my roommate and some friends and I rented out the apartment in our dorm (no kitchens on the dorm floor :( ), and made dinner!

Pizza Bites

I'm a scaredy cat.

Doll in Toy Story? Scared.

Dolls in general? Terrified.

Transformers? Vampire Diaries?  Yes and Yes.

In my defense, I only get scared at certain parts -then I hide behind a pillow and wait until P says it's okay to watch again. 

Ironically, just after talking about how the nun masks in The Town creeped me out, my friends and I walked into a movie theater -only to see giant posters of the nun masks everywhere advertising the movie in Imax. 

Perfect!

Merppp. Anyways, onto to crazier happier things -pizza bites! 

Anything pizza is pretty delicious, and these are no exception. These are great if you want a snack or need a dish to bring somewhere.

Lemon Cheesecake Bars

A majority of the time, I have a reading problem. 


My brain fritzes out, eyes glaze over... who knows what happens. 


I just end up with a bunch of wrong answers on a test or some surprisingly lemony cheesecake bars!




These are the same bars that Em made over winter break, except with a few modifications!


I totally misread the recipe and added the juice of an entire lemon. Turns out, I actually prefer it with this extra lemony kick!


Since this was also a part of a little celebration, we added some chocolate swirls for some extra happiness.

Peanut Butter Chocolate Chip Blondies

Oops. Just realized that everything we've made recently either involves peanut butter or pizza.  So if you're allergic to nuts or have a strong distaste for pizza (tears) -my apologies!


I swear we don't just live off these two things!




Peanut Butter Chocolate Chip Blondies is too crazy to say. In the spirit of medicine, let's use PBCCB instead.

This time, I actually remembered to take a picture in the daylight. Since days -especially mornings are designated study time, I tend to bake at night.


Doesn't always bode well when my brain is barely functioning! I usually mess something up. And I forget to take a picture, or if I do remember, it's all weird and hazy from lack of lighting!

Smores Bars

And my life flashed before my eyes. For real.


Even though it was the most ridiculous little thing, I've never moved so fast in my life. 


Smores are made for camping trips -to calm you down after a snake encounter. But when you've accidentally bought way too many smores supplies and have no convenient campfire within a 30 mile radius, it's time to make some bars.




Yup those are giant marshmallows.

Peanut Blossom Cookies

Don't you ever wish there were more hours in a day? 


Mmm. Actually, maybe not.  That would mean more time for studying.


I do wish I could multitask more. Like talk on the phone while folding laundry and catching up on cool things of the interweb.


But I don't even have a time turner...bummer. 




These peanut blossom cookies were a part of our holiday baking extravaganza. Afterwards, we were completely exhausted from spending that much time in the kitchen. It took us a few weeks to even want to get back into the baking world.

Pepperoni Bread

Wow. I thought it was bad that I forgot about the Pumpkin Bars, but actually...I also forgot about this Pepperoni Bread.


My memory is getting worse each day...this bodes well for the future.
I could probably eat pizza for the rest of my life. Or I could eat pepperoni bread. Basically the same awesomeness in slightly different form. 


This was perfect for P's daily pizza cravings.

Pumpkin Bars

Let's talk about something gross. Well, it creeps me out.


Em's got a little ant problem. And by little, I mean gross. 


Only one of the many downfalls of living in a dorm!


Sorry... I just can't do bugs. Studying parasites for GI? Pretty sure I got the shivers every time I read a sentence. So if anyone knows a good ant-be-gone solution, send them our way.


Anyways!!


It was a birthday cake weekend -Velvet Devils Food Layer Cake with Coffee Buttercream Frosting.  


Normally, I'm definitely not a frosting person, but this coffee buttercream frosting was life changing. 


Too bad I forgot to take a pictureeee. 


Fail. Major. Fail.


So it's not a cake post, but Pumpkin Bars! 


Em and I made this wayyy back in pumpkin-holiday season.  And then promptly forgot about it until now!




It's super easy to make when you're craving pumpkin, but a pie is totally out of the question.  (Really, who has time to make a pie...)

Cheesecake Bars

We hope you all had a fabulous New Year's!


Sorry we've been on a bit of a hiatus, but winter break has been full of seeing friends and family, sleeping insane [*necessary] amounts, and catching up on a little tv (...okay, a lot!) We all needed a bit of refreshing and recharging even after the holidays, right?


As we mentioned in the last post, this break we tried some new recipes courtesy of the ah-mazing America's Test Kitchen. Now I'll admit, I'm not a big fan of cheesecake...WHAT? Crazy, I know, but the crust is my favorite part! Anyways, M and mom lovelovelove the stuff so I decided to try my hand at making it this break!
