Sneaky Snickers Cookies
One week ago: miserable.
Today: oh so happy. *I wrote this a couple of days ago. Oh how things have changed already...
Having the impending doom of an exam definitely dampens the spirits...
But having a weekend to do absolutely nothing certainly lifts them as well!
It was a perfect weekend after some intense studying and a new found fear of getting a crazy disease -bugs&drugs, you win!
Baking coconut buns (coming soon!) and banana bread with friends, watching girly movies, and just having a life outside of my books is probably the best thing I could ever ask for. I'm already waiting for the next weekend...
What else makes me happy?
These snickers cookies.
In general, cookies make me happy. But these are on another level!

Obviously combining candy and cookies is possibly the best idea anyone could ever have (those Chunky Twix Cookies were pretty amazing).
But really, these cookies are totally delicious and perfect for anyone who loves peanut butter and snickers!
Just how good are these sneaky snickers cookies?
So good that I made them for a friend's birthday...two years in a row!
Peanut butter on the outside with a mini snickers candy hidden on the inside -it's almost too good to be true.
Recipe (adapted from The Cooking Photographer)
1 stick butter, softened
1/2 cup creamy peanut butter
1/2 cup sugar
1/2 cup light brown sugar
a pinch of salt
1/2 tbsp vanilla extract
1 egg
1/2 tsp baking soda
1 3/4 cup flour
1 bag of mini snickers
Using a mixer, mix butter, peanut butter, sugar, brown sugar, salt, and vanilla extract together until fluffy.
Add eggs and mix.
Add baking soda and flour until just incorporated.
Cover dough and refrigerate for at least 1 hour.
Take a scoop of dough and flatten it.
Place snickers in the middle and wrap and seal.
Bake 10-12 minutes.
And on a "TeeeVeeee" note, anyone catch the Emmys? I have to admit my favorite moments include Melissa McCarthy -from Mike & Molly and Bridesmaids (!!) winning, all the nominees for Best Actress in a Comedy getting on stage -Amy Poehler is super hilarious, Jimmy Fallon and Jimmy Kimmel wrestling it out, and finally, Downton Abbey!
