Lemon Squares

Lemon Squares! 


Kay and I were reunited after a month apart and decided to celebrate with a little lemon magic.  

Em's response to hearing that we were making: "Oh you and the lemons"!

Plus, they were super lemony, just how Kay likes it!!




Recipe (from America's Test Kitchen)

Crust:
3/4 cup all purpose flour
1/2 cup confectioner sugar
3 tbsp cornstarch
1 1/2 tsp grated lemon zest
1/2 tsp baking powder
1/4 tsp salt
4 tbsp butter cut into 1/2 in. pieces and chilled
1 tbsp whole milk

Lemon topping:
3/4 cup sugar
1 large egg + 1 large egg white, lightly beaten
2 tbsp flour
1/8 tsp salt
1 tbsp lemon zest + 6 tbsp juice
1 tbsp confectioner sugar

Preheat to 350 degrees and line 8 in square pan with foil sling.
Spray lightly with non-stick spray.
Process flour, sugar, cornstarch, lemon zest, baking powder, and salt until combined. 
Add butter and milk -pulse until resembles coarse meal.
Press into an even layer in pan.
Bake 16-20 minutes and cool 15 minutes.

Lemon topping:
Reduce to 325 degrees.
Whisk sugars, egg, egg white, flour, and salt until smooth.
Stir in lemon juice and zest.
Pour filling and bake 15-20 minutes. Cool 1 hour.
Dust with confectioner sugar.
