A Big Pot of Chili

What's for dinner? What's for lunch?


Chili-i-i-i-i-i. 


Not a baking recipe? Whaaat?

Yup, that's right.  Em&M are branching out.

Actually, it's just me.  Em's currently enjoying (or not) lovely convenient dorm food. 

I'm a fan of cooking lots of food on the weekend and then living off of it until... well, until it runs out. So a nice big pot of chili was cooking away in the kitchen last weekend a few weekends ago!


Even though this chili is perfect for a rainy day, I'm not quite ready to say goodbye to summer, and my tomato plant isn't either!


So far the plant has only yielded ONE tomato... although tasty, one tomato for a giant wild tomato plant is very disappointing.  


But there is hope! The plant has started flowering and maybe, we'll get a few more tomatoes (hopeful thinking to the max). 


Remember the happy tomato email and picture I received from my mom a while ago? Well this plant is one of her many prodigies, although the ones at home did much much better.  My mom probably would be a farmer if she could. 




Those are tomato plants by the way... The green thumb runs in the family, that's for sure. My grandfather used to painstakingly take one of those crayola brushes (the kind you used for water-painting when you were little) and help pollinate some Chinese vegetable plant's flowers. Now I'm continuing the tradition! 


Not really. I don't have any paint brushes to use. I just crack open the window and hope nature will do its job.



Back to dish at hand! Chili! After making this, guess who realized who's not a big fan of beans?


But they seem pretty necessary in a giant pot of chili. I'll just pretend they're not there. Unlike baking, cooking is totally flexible.  I usually just wing it and estimate!

Recipe (makes a big pot)


2 large onions, chopped
2 potatoes, cubed
2 green peppers, chopped
1 tbsp minced garlic
2 carrots, diced
1-2 lbs ground turkey
2-3 tbsp chili powder
1 tbsp cumin
2 tbsp paprika
1 tbsp oregano
dried red pepper flakes
1 8 oz. can tomato sauce
1 1/4 cup chicken broth
1 19 oz. can kidney beans -rinse and drain


Heat some oil and cook the onions until softened. 
Add garlic, potatoes, and carrots and cook for 1 more minute.
Increase the heat and add the turkey, cook until no longer pink.
Add the spices and stir.
Add the tomato sauce and broth and let simmer for 35-40 min.
Add the kidney beans and peppers. 
Salt to taste and simmer for 15 minutes.

    [2] That plant is ridiculous (your moms, that is.) Seriously, she could be the guest gardener that little children from Sesame Street or Barney go to visit to learn about plants. It'd be riDICulous.
    [3] After reading your recipe, I want to say, "Simmer down. Simmer down, folks." I don't know why.
    [4] I like how in the Home Improvement picture, some people look like they haven't changed at all and some, well..., some do.
    [5] Chili? It seems like summer when you post chili recipes, M! Someone clearly is clinging onto the memory for dear life. :)

  2. My roommate and I do this all the time! We'll make a huge pot of veg chili and cornbread and eat it for the next week. Makes for easy weeknight dinners!

  3. Love the chili! It's cold today and chili sounds amazing right now...yum!

    I also LOVED Home Improvement. It's so funny to see how grown up the kids look now. I love reunion shows :)
