Chocolate Chip Streusel Muffins

There's nothing quite like coming home after being away at college, and relishing in the simple joys of life...

Showering in your own bathroom.

Showering without shower shoes.

Walking barefoot.

Eating food without eyeing it suspiciously...

and most of all, spending time with family!



Having easy access to a kitchen at home, I decided to become non-MIA from this blog (it's been my first semester away at college, but luckily M has been so awesome at updating and making up for my lack of posts =) ), and bake something!

Well, I'll be honest. I just wanted something to snack on and eat for breakfast... I swear my parents shop for less yummy (junk) food with M and I away at school! These muffins are the perfect blend of my two favorite things: chocolate and crispy muffin tops!




As weird as it sounds, haven't you ever split the muffin between top and bottom because the crispy top is just that good?? I definitely have...it's a guilty pleasure!

The streusel that you put on top of the muffin makes this breakfast/dessert/snack an extra delight!

Makes: 12 muffins
Recipe: Muffins (Adapted from Toll House)
1 1/2 cups all-purpose flour
1/4 cup granulated sugar
1/4 cup packed brown sugar
2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup (1 stick) butter or margarine, melted
1/2 cup milk
1 large egg
2 cups semi-sweet chocolate chips


Recipe: Streusel topping
1/3 cup packed brown sugar
3 tablespoons all-purpose flour
1 tablespoon butter or margarine, melted
1/4 cup chopped nuts (I used chopped almonds, and it gave the muffins the perfect crunch!)

Preheat oven to 350 degrees, and line tin with 12 muffin cups.
Muffins: Combine flour, granulated sugar, brown sugar, baking powder, and salt in a bowl. Microwave and combine the melted butter; add in milk and egg until moist. Stir in the semi-sweet chocolate chips.

Streusel topping: Combine brown sugar, flour, and butter in bowl. Stir in nuts, and sprinkle over muffin batter; press down slightly.



Bake for 20-25 minutes.




As a side note, I'm in the library right now and it is absolutely FREEZING. But maybe that's because I'm wearing shorts...well, anyways!
