Strawberry Upside Down Cake

Oh the joys of summer! Sleeping "x" amount of hours, spending time with friends and family, and of course all the fresh fruit you can eat! 

 

M spoke earlier of our July 4th tradition of picking cherries, but the plus side (one of the few...) of living in the middle of nowhere is the abundance of farms!

Lots of farms means many chances to pick fresh fruit!


Strawberries, Blueberries, Cherries, Apples, Galore!


With our cousin in tow, we went strawberry picking with a few friends. Armed with a tub of water and paper towels, we ate our way through the patch while slowly filling our baskets with bright red strawberries.




We literally camped between the rows and snacked on fresh sun-ripened strawberries. Coming across the giant mutated berries always gave the most satisfaction! 


But if you're like us, you might end up picking more fruit than you can eat before it all spoils. 


But never fear! There is hope! This strawberry season, M and I decided to take some of our leftover strawberries to make a dessert and some smoothies for the family.




Strawberry Banana Smoothies!
For these, we just added some strawberries, banana wedges, ice cubes, and a dollop or two of yogurt and a spoonful of sugar! Blenderize and ta-da!




The cake was perfectly sweet with just the right amount of strawberry goodness.  While it may seem absolutely crazy to crank the oven on during these hot summer days, this cake will be worth it!  Make sure to have empty stomachs or enough mouths around, this Strawberry Upside Down Cake is best eaten fresh out of the oven and with a dollop of ice cream!

Recipe (adapted from America's Test Kitchen)


Topping
2 tbsp butter

1/4 cup brown sugar
1 cup sliced strawberries
 


Cake
6 tbsp melted butter, cooled
1 cup flour 1 tsp baking powder
1/2 tsp salt
3/4 cup sugar
1/4 packed cup light brown sugar
2 large eggs
1/2 cup sour cream (or original yogurt)
1 tsp vanilla extract



Preheat the oven to 350 degrees.
Put some butter inside the pan you intend to bake in, and place the pan in the oven for a bit to melt the butter.
Take the pan out once the butter is melted and swirl the butter so all sides are well coated.
Whisk the dry ingredients together (flour, baking powder, salt) .

Whisk eggs, brown sugar, granulated sugar together.
Then slowly whisk in butter, and then add sour cream and vanilla.

Whisk in dry ingredients to combine.
Sprinkle 1/4 cup brown sugar into melted butter inside pan.

Sprinkle sliced strawberries on top to form the fruit layer.

Pour in batter.

Bake for approximately 35 minutes, and then cool for at least 20 minutes before running a knife through the sides and flipping the cake.

    [1] Those are the reddest plumpest strawberries I've seen in a while. If that's how much you had left over after strawberry eating, I can't imagine how much you drove home with!
