Chewy Ginger Chocolate Cookies

Happy Fourth of July everyone!!

A July 4th Em&M family tradition is going cherry picking!! Around this time of year, the family would pack up the car, take a tub of clean water and drive an hour to the orchard. The orchard is filled with endless rows of cherry trees filled with sweet ripe goodness. Simultaneously, we would fill our wicker baskets and our tummies with the cherries! 


Over the years, family and friends would join our cherry adventures or one of us would be sadly have to miss the fun. Traditions are becoming more difficult to fulfill, but it's still heartwarming to know that they are still something we look forward to. 


On an entirely different note, ever end up with an entire bottle or box of something that you really only needed a teeny tiny bit of?



That's how I feel about molasses.
I bought an entire jar for Flour's Ginger Molasses Cookies and I have been looking for other recipes that incorporate molasses ever since. 

These cookies are essentially ginger molasses cookies with chocolate chips. The resulting combination is both flavorful from the molasses and spices and sweet from the chocolate. The chewiness is perfect, although bake them for a bit longer they will be crispy as well!


These cookies are super easy to make and only require the most basic ingredients that you'll have in your pantry!
Wet and dry ingredients...


Sugar to roll the dough in...




Recipe
2 1/4 cup flour
2 tsp baking soda
1/4 tsp salt
1 tsp cinnamon
1 tsp ground ginger
1/2 tsp ground cloves
1 1/2 sticks softened butter
1 cup brown sugar
1 large egg
1/4 cup molasses
1/2 cup chocolate chips
1/4 cup granulated sugar

Preheat to 350 degrees.
Sift flour, baking soda, spices, and salt in a medium bowl.
Beat brown sugar and butter together.
Add eggs and molasses to brown sugar mixture.
Slowly add flour. Mix and stir in chocolate chips.
Coat in sugar.
Bake 12-14 minutes.




I was surfing the interweb last week when I came across the documentary, Kings of Pastry, on PBS.  It follows 16 chefs competing for Meilleurs Ouvriers de France, or the Best Craftsmen of France.  The chefs create crazy elaborate sugar sculptures that tower high above anything else, as well as delicious looking pastries and gorgeous wedding cakes.  It's a great documentary that is super exciting! It is a definite must-see for anyone!!

    Kings of Pastry! Kings of Pastry! Thanks for recommending it. :) I <3ed it. Also, I think I want to try and make these cookies. Your addendum on extra minutes equalling crispy crispiness caught my eye...I love traditions. I'm not sure if I love traditions more or spending time remembering them.
