Double Chocolate Chip Cookies

Want to hear something hilarious and stupid?

Em: Today in gym class, we had to do yoga. Then we had to do a bridge and I couldn't even do one!
M: Aww, I can totally do one!

        M proceeds to do a bridge.

M's back officially hurt after doing the bridge. Like old lady status hurt. It's a sad hilarious day.


Cookies in exchange for a sore back!

I have been on a week-long chocolate overload, and it all started with these great things.  It's shot up to the number one baked good on a friend's list (and this list is pretty long!). 

But really. 
Chocolate. 
Plus more chocolate. 
And it's all in cookie form.


 It begins with this:

But really, the chocolate made the cookies truly great!

  
Recipe

4 oz bittersweet chocolate (1 bar)
1 stick butter
2 large eggs
1 1/4 cup sugar
1 tsp vanilla
1 cup all purpose flour
1/2 cup unprocessed cocoa
 1/2 tsp salt
1/2 tsp baking soda
1 cup chocolate chips (or chocolate chunks)

Preheat to 325 degrees.
Mix flour, cocoa, baking soda, and salt together in one bowl. 
In another bowl, melt the butter and 4 oz of bittersweet chocolate over low heat or in the microwave.  
After melted, add vanilla.
In a different bowl, combine the eggs and sugar and mix until fluffy. Add in the chocolate mixture slowly.
Add the dry ingredients and stir until combined.  
Fold in chocolate chips or chocolate chunks

Drop 1 1/2 tbsp spoonfuls on baking sheet lined with foil or parchment paper
Bake  12-13 minutes so that it is slightly underbaked. (This keeps it chewy!)

  1. I hear ya. I used to be able to do a bridge when I was about 6, but those days are long over. Never mind, chocolate is a good way to console yourself.

  2. These are sooo delicious! The dark chocolate is the best, and adding cocoa powder, I bet, is key to the chocolatey-ness pouring out of these cookies. I like the note on how to keep them chewy--that's the best party, actually! Chewy, chocolatey, cheery, chunky cookies. Mmmmm.

    IKEA is awesome.

    And the first picture is so pretty. The lighting is great in that one!
