Chocolate Chip Cookie Pie

Just kidding. There's no pie.

This is really just a giant cookie baked in a pie dish. Like the cookie cakes at Wegmans we get every year for birthdays.

We were craving something sweet and delicious, but limited on time (as always) and ingredients.

The solution?  A giant 9.5 inch cookie!

Recipe (adapted from Serious Eats)

1 cup flour
1/2 tsp baking soda
1/2 tsp salt
8 tbsp unsalted butter, at room temp
1/4 cup packed light brown sugar
1/2 cup sugar
1/2 tsp vanilla extract
1 egg
1/3 cup chocolate chips**

1. Preheat to 375, grease pie pan.
2. In small bowl, whisk flour, baking soda, and salt.
3. Beat brown sugar, sugar, and butter together.
4. Add vanilla and egg until combined.
5. Add flour mixture to wet and add in chocolate chips until just combined.
6. Bake for 20-22 minutes

*more/less depending on how chocolate-y you like it; 1/2 cup is very chocolatey!
