Chocolate Oatmeal Cookies

I have made it my night's mission to start and finish this post.

Otherwise, it'll never happen.  

17 minutes in: I have 2 sentences...not including this one.

Gahh. I get distracted way too easily by the interweb. And by TV, but more on that later. 



Chocolate Oatmeal Cookies! 

These cookies were made out of studying procrastination/frustration a month or two ago, when I was feeling less guilty about baking. 


They're quick and easy to make -which works well if you're short on time, but craving something sweet!



Recipe (from America's Test Kitchen)

1 3/4 cup old fashioned oats
1 cup flour
3/4 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
10 tbsp unsalted butter, softened
1 cup packed light brown sugar
1 large egg, room temp
1 tsp vanilla extract
3 oz milk chocolate, melted and cooled
1 cup semisweet chocolate chips

Preheat to 350 degrees and line baking sheets with parchment paper.
Process 1 cup of oats in food processor until finely ground, 30 seconds.
Transfer to bowl and stir in flour, baking powder, baking soda, and salt.
With mixer, beat butter and brown sugar until smooth.
Add egg and vanilla until light and fluffy.
Add melted chocolate and beat until combined.
Reduce speed to low and add flour mixture. Mix until just incorporated.
Add remaining oats and chocolate chips.
Roll 2 tbsp of dough, space 2 inches apart. 
Bake 14-18 minutes until tops are cracked.



TV! It's one of the few things that's keeping me sane. I love watching a happy funny 20 minute show... 

Happy Endings is one of my favorites that I've been recommending to everyone!

Max, played by Adam Pally, is most definitely my favorite character, but the whole cast is absolutely hilarious. 


Another show I've been hooked on? Best Friends Forever!  There are only 2 episodes out, but I died watching the latest one.
