Apple Crisp

There are some things that you just always look forward to. 


Pizza. A Free Weekend. Friends. Bad TV. Sleep. 


And things you don't. 


Rain. Exams. Waking Up. Coming home in the dark. 


But the good things (like this) can always turn a bad day into a better one. 




Apple Apple. Crisp Crisp.


In reality, this is more Crisp than apple. 


Can't help it! 


The only good thing that came out of the dining hall in college was apple crisp. And really, it was the crisp. Pretty sure we just tried to get the yummy topping and and as little apples as possible. Oops. 


Every fall since then, my roommate and I have made apple crisp -but if it were up to her, there would be no apples at all. 


As a compromise, we always add as little apples as possible and as much crisp as we can.  Basically 2/3 crisp, 1/3 apple.






Recipe 
1 cup flour
1 cup sugar
3/4 cup old fashioned oats
1 1/2 tsp cinnamon
1 stick butter -chilled and cubed
3 Gala apples (I just use whatever apples I have on hand...and if you like your crisp Apple-y, use up to 5 or 6 apples!)


Preheat to 350 degrees.
Peel and cut apples into bite size pieces. 
Whisk the dry ingredients together. 
Cut in the butter (add in the cubed butter and mix it in with your hands until the pieces are pebble-sized). 
Add the apples and then the crisp into a 8x8 pan. 
Bake 30 minutes.
Best eaten warm! Or with ice cream!




In other news, it only took 200 years to go from 1 billion to 7 billion people... what!
