Brown Sugar Oatmeal Cookies
It's that time of year again.
The sunshine beckons. The green grass begs to be walked on. (Okay, okay, minus this CRAZY weeklong weather depression. Stupid rain.)
Summer blockbusters call to your wallet. TV shows shock and awe with crazy cliff-hangers.
That pile of work? PSSHH.
I've been hit with a severe case of summeritis. It's like senioritis, but can afflict everyone.
Symptoms? The mentality of "why can't it end alreadyyyyyy????"
These cookies can temporarily alleviate such symptoms.
But enough of all this medical talk, I've been spending too much time with mybooks syllabus.
Brown Sugar Oatmeal Cookies!
I initially made these cookies out of redemption; the last oatmeal cookies I made looked like little pieces of poo.
Just ask my roommate. They were pretty tasty, but not so pretty.
But honestly, I cannot wait until exams are over and I can enjoy summertime.
Summer vacation -I love you. (Don't ask me what I love more, summer or cookies.)
Recipe (adapted from Caramel & Vanilla) Makes ~20 cookies
3/4 cup + 2 tbsp packed brown sugar (I used light brown, but dark brown will give it more flavor)
1 stick softened butter
1/2 tsp vanilla
1 egg
1 cup flour
1/2 tsp baking powder
1 1/2 cup old fashioned oats
Preheat oven to 350 degrees.
Beat butter and brown sugar together until light and fluffy.
Add in vanilla and egg.
Mix flour, baking powder, and oats together in separate bowl.
Add dry ingredients to the wet ingredients.
Add in about 3/4 cup of chocolate chips, depending on how much chocolate you like.
Shape tablespoon-sized balls and flatten.
Bake 8-9 minutes.
Something I absolutely LOVE is John Krasinski. He makes me laugh each week on the Office. He's basically crazy hilarious in everything -I could watch his scene with Alec Baldwin in the bathroom in It's Complicated a million different times.
Like Kay (check her out at Scavenging the Interweb!) says, I'm Craz-inski in Love!
