Lemon Sugar Cookies
First rule of Baking:
Rule #1: Make sure you have all the ingredients you need. Most importantly: sugar.
Rule #2: Make sure you have really nice neighbors, in case you run out of ingredients.
Some friends and I made Lemon Sugar Cookies and Lemon Matcha Pound Cake (coming soon!) but we definitely failed at Rule #1.
We ran out of sugar -scandalous, I know- but luckily, we had fabulous neighbors and friends who saved us...twice.
Who runs out of sugar -two times?
Apparently we do!
Without sugar, things could get pretty ugly. Although the New York Times just published an article: Is Sugar Toxic?
Conclusion? Not sure. But like with anything else, it's best to have sugar in moderation.
This can get pretty tricky when you bake a lot...
Mmm cookies!
I like cookies better than anything else (but these Green Tea Cupcakes infinitely redeemed the cupcake genre). What was so great about these Lemon Sugar Cookies was that they reminded me of Wegmans sugar cookies.
Lemon is their secret ingredient! If you've never had any Wegmans cookies, run to upstate New York and go find one. From chocolate chip to cranberry oatmeal, cookies from Wegmans are fantastic.
But back to reality,

Lemon means springtime -so does warm weather, flowers, and the smell of mulch- but that's you get when grow up in the middle of nowhere.
Definitely give these super easy Lemon Sugar Cookies a try. They are super easy and taste fantastic. This recipe makes a lot of cookies (4 dozen) so if you don't want to be drowning in baked goods, definitely cut the recipe in half.
Next time, I would make the cookies smaller, add some more lemon ...and definitely get enough sugar.

Recipe (adapted from Baking Bites ) Makes 4 dozen
2 1/2 cup flour
2 tsp baking powder
1/2 tsp salt
1 cup butter at room temperature
1 1/2 cup sugar
zest and juice of 1 lemon (could probably add more next time!)2 large eggs
1/2 tsp vanilla extract
2-3 tbsp sugar for rolling
Preheat oven to 375 degrees.
Line with parchment paper.
Whisk flour, baking powder, and salt together.
In a large bowl, cream the butter, sugar, and lemon zest together.
Beat eggs in one at a time, and add vanilla extract.
Add in flour.
Roll 1 tsp. sized balls in sugar.
Bake 9-11 minutes.

ReplyDeleteI once took a vegan baking class and the instructor forgot to pack the sugar. You know what tastes really bad? Vegan baked goods missing sweetener. You've got some outstanding neighbors.

Yum! I love lemon cookies :) I always feel like I run out of ingredients. The one day I went to make something and realized I had no eggs...how did that happen?
