Scallion Pancakes

Guess what?!?

Cinnamon may be good for your health!

More research does need to be done, but it may be able to control glucose levels  for diabetics, reduce LDL (bad) cholesterol, and total cholesterol levels for people with Type II Diabetes.

Bad news: gotta have half a teaspoon of cinnamon a day for these possible benefits. 

Even though I love cinnamon, half a teaspoon? That's kind of pushing things.

But back to this post, Scallion Pancakes!

  

Scallion pancakes may conjure images of the traditional fluffy American pancake with syrup, but this is not your average pancake.  In fact, this is in no way related to that pancake. This is a crispy flaky round bread filled with scallions. 

I grew up eating scallion pancakes for snacks and appetizers -but they were usually the frozen type from the supermarket.  A few weeks ago, a family friend taught my mom and i this super easy recipe and just last night, a couple of friends and I made them again!

 After forming and letting the dough rest, divide it into 6 portions.



Roll each portion into a thin rectangle or circle less than half a centimeter thick.  Spread 3/4 tablespoon of vegetable oil, sprinkle about 3/4 teaspoon of salt and scallions all over.





Roll into a log and then shape the log into a spiral and tuck the end beneath so it's on the bottom.


Squash the spiral into about 1/2 a centimeter thick and then fry in a pan with about a tablespoon of oil! These can be frozen and then refried when you want to eat them.



Recipe (makes 6 scallion pancakes)
2 cup all purpose flour
1 cup boiling water
1 bunch of scallions
Salt
Oil

Mix the boiling water and flour together in one bowl and knead on a floured counter for about 5 minutes until the dough is smooth.  
Let the dough rest for 30 minutes.
Divide the dough into 6 portions.
Take 1 portion and roll it into a rectangle or circle that is less than 1/2 a centimeter thick.
Spread 3/4 tablespoon of oil all over and sprinkle salt on top.  
Sprinkle the green onions.
Roll the dough into a log, spiral it, and tuck the end underneath.


Fry in a hot pan with about a tablespoon of oil.

We even made some scallion pancakes in awesome shapes.

  1. Mmmm, pancakes! If you like your pancakes more crispy than doughy, smush them more to make them flatter. They tear a little bit around the edges, but you can't really tell when they're done!

    I liked that website. I didn't realize it was a blog! The formatting is so nice there.

    Jim Parsons is my hero. Okay, exaggeration. The show has a really strong ensemble, but I think he's the best!

    These also taste just as good if you fridge 'em and then microwave them the next day. I believe you can freeze them too.

  3. My dad takes cinnamon pills everyday. He takes them for his diabetes. He says they help.

    These pancakes look super delicious...yum!
